Warren couple buys The Arbor Coffee House & Tea Room

Times Observer photos by Ann-Marie Gariepy Arbor owner Aaron Burdick and his team invite the Warren community in to enjoy old favorites as well as new menu options.

When they first met 20 years ago as co-workers at what was the Fresh Cup coffee shop from 2006 to 2008, Aaron and Salysa Burdick had no idea what the universe had in store for them.

It turned out a full circle moment was in their future.

Since moving back to Warren from Erie two years ago Aaron Burdick has been a busy stay-at-home dad of the couple’s two young children while his wife works at a local business full time. Coming down from the rigors and grind of his former employment in retail and field leadership roles, Burdick began wondering how to become more active and involved in the Warren community.

Then opportunity presented itself.

About six months ago, Jennifer Phillips, owner of The Arbor Coffee House & Tea Room, formerly Fresh Cup, approached the Burdicks with the prospect of them taking over the business.

Aaron Burdick and J.T. Telschow, kitchen lead, brainstorm plans for a new holiday menu.

“We knew pretty much immediately that we wanted to explore the option, ” said Burdick with excitement. “We met here, got engaged here and signed the papers for our new house here. It felt like the right direction to go in.”

“We were committed to making a seamless transition and stewardship of this community space,” Burdick explained of the changing of ownership. “The heart of the Arbor is not changing.”

Keeping the core of what is the Arbor, while building up the (Warren) community and creating bonds and relationships, Burdick sees opportunities and potential for growth everywhere. Setting to work to freshen up the menu Burdick worked with Kitchen Lead J.T. Telschow and his team to create new items.

“Nothing has been removed from the menu,” Burdick said when speaking of customer favorites, “only added.” Expanded hours of operation were quickly established as well, with the business now open Monday through Friday from 6 a.m. to 3:30 p.m. and Saturdays from 7 a.m. 2:30 p.m. Remaining closed on Sundays, Burdick says it’s important for him that the staff have “reliable days of rest” during their work week.

Creative Lead Taryn Phillips searches out local artwork, artisanal goods and food stuffs that can be integrated into a rotation of food and drink specials. Local maple syrup from Hazeltine Maple Farm in Bear Lake, Pa., has made its way into drinks and dishes currently being served.

While waiting for her order, customer Emily Sullivan takes time to slow down and write out a card.

“We want to show the community what’s out there,” Burdick said.

Of the Arbor’s former owner and her daughter, long time employee Devyn Phillips, Burdick emotes “Jen and Devyn have been helpful and extremely supportive.”

Starting at $3.50/week.
